Thoughts from Our October 2021 FPC Leadership Meeting

The Leadership team of the Food Policy Council recently got together to plan our first annual GATHER celebration (see below for details and join us there!).
To get us in the spirit, we used our check-in to learn more about each other's favorite soups. In the process, we also learned that our partners in nutrition education at University of Kentucky have a great resource for recipes, including a bunch of yummy soups, in their Plan. Eat. What's your favorite soup for fall?

Mine is beef and cabbage roll soup from one of the SNAP-Ed calendars our partners at UK used to hand out. It makes large quantities and my family likes it!
It's a tie between chili (a variety of recipes) or vegan butternut squash soup.
I love chili with some cornbread sprinkled in, or butternut squash, purely because my sister used to call me Butternut Squash Face, and I loved it and thought it was really cute, but she meant it as an insult!
Mushroom soup or potato leek soup are my favorites, but I recently made a sweet potato soup that was alright.
I don’t eat a lot of soup, but chili. Very specifically, it has to be red, beef chili, and not too spicy.
I love to eat and make all kinds of soups and stews and chilis. One of my newest favorites is Hearty Comfort Soup. It’s an absolute delight!
I make a pretty good lentil soup, but in the spirit of the harvest season, I’m thinking a pumpkin or a butternut squash curry soup.
